ND67 Ex Sherry Cask Single Malt
Back in 2019 we had the opportunity to buy some amazing oak casks, including one that had been seasoned with a blend of Oloroso and Pedro Ximenez Sherry.
In hindsight we wish we had bought a lot more.
This oak cask had been shipped "wet" to Tasmania. This means that a quantity of the sherries kept the cask moist on its journey.
Cask selection is pivotal in creating great whisky as the cask gives it all it's colour and 60% - 80% of it's flavour. The balance of the flavour is the result of the character we carefully create by choosing premium grain and yeast strains and then distil into our spirit
In Feb 2019 we filled this cask with our double distilled spirit and three years later on 22/2/22, when we determined the whisky had matured to perfection, it was decanted and the process to bottling started.
Given all the twos in dates surrounding this whisky it is appropriate that the number 2 is considered to signify harmony as the nutty notes from the Oloroso, the sweetness from the Pedro Ximenez, the vanilla from the cask all sit in harmony and enhance the rich, dark-fruit flavour of this whisky.
