Sloe Gin Fruit Crumble
Are you craving something different and amazingly delicious for desert?
This Sloe Gin Fruit Crumble is just the treat.
Ingredients
500 g mixed fruit (blueberries, raspberries & blackberries)
3 plums (take the stones out and roughly chop them)
200 ml sloe gin (Nonesuch of course)
50 g sugar
1/2 tsp ground cinnamon
120 g caster sugar
120 g butter
240 g plain flour
50 g rolled oats
How to make it.
Put the fruits into a large bowl and pour the sloe gin over them. Cover and leave in fridge overnight (or as long as you can) to allow the Sloe Gin to infuse the fruit.
Heat the oven to 190°C (170°C fan forced).
Drain the gin off the fruit into a saucepan. Add the sugar and cinnamon and bring heat slowly, stirring constantly, until the sugar has dissolved. Turn the heat down and simmer until the syrup has thickened and reduced slightly (about 10 minutes should do it).
Scatter the fruit into your chosen dish and pour over the sloe gin syrup. Set aside and make your crumble top.
Into a bowl put the flour, sugar and butter. Gently work the mixture (use your fingers) until you get golden crumbs. Add 40g of the oats and mix in (fingers again).
Sprinkle the crumble mixture on top of the fruit and scatter the remaining oats on top.
Put in the oven until the crumble is golden and the fruit has slightly bubbled at the sides (around 40 minutes).
It will be piping hot when cooked so let it stand for 5 minutes before serving with vanilla ice cream or custard.
