Don't worry, these are not "happy" seeds and you won't get high on them. However, you will experience the amazing characteristics of these ancient seeds bring to a Gin.
'emp seeds have a buttery, nutty flavour and are full of fatty acids and proteins that contribute to the creation of a creamy and full mouth-feel in a gin.
We discovered that the 'emp seeds shone best in the company of a grain spirit so the process for making this Gin is more like that used to create Jenever in The Netherlands or Belgium that that more traditional London method.
This process requires the production of a grain spirit that is double distilled in our copper pot still from a grain mix of Rye, Corn and Barley that we mash and then ferment on site.
The 'emp seeds are distilled in a second spirit (a neutral spirit) along with the other carefully selected botanicals.
The meticulous combination of each of these elements results in a gin that can be enjoyed neat, over ice or in your favourite cocktail.
