From a Single Cask filled on 22/2/19 and decanted 3 years later on 22/2/22
The cask chosen for the maturation of this release was seasoned with a blend of both Oloroso and Pedro Ximenez sherry.
Oloroso is known for its fruity and nutty flavours while Pedro Ximenez is a sweeter style and having soaked into the wood they have superbly influenced the colour and flavour of this whisky
The cask was shipped "wet" to Tasmania. This means that although the sherry had been emptied the bung was replaced so the inside of the cask remained moist.
The cask was then immediately filled with our spirit. Known as a "wet fill", this process has resulted in a whisky with deep, rich sherry notes.

- Double distilled in our bespoke copper pot still
- Non chill filtered
- Each bottle individually hand labeled and numbered
- Bottles can be signed on request or a handwritten note included (simply ask in order notes)
