Paragon (noun): a model of excellence
This whisky was matured in sperate, small (20 litre) American Oak casks that were coopered in Tasmania from barrels that previously held Bourbon Whisky.
These casks are prized around the world for maturing Single Malt. In fact, around 95% of Scottish single malts are maturing in this type of cask sourced from the USA.
The casks this whisky were specially selected from our stock for the different but complimentary notes each had developed during maturation.
We have chosen to partially "floc" this whisky. That means retaining a little of the naturally occurring oils and proteins that provide an enormous amount of the flavour, mouth-feel and the finish of a great whisky.
