How we Distill Tasmanian Whisky

Our approach to crafting and distilling whisky is one of a kind - it's what gives Nonesuch whisky that special something you won’t find anywhere else. Now, we’re not about to hand over all our secrets, but we’ve put together a few insights to answer some of the questions we get about how we create that unmistakable Nonesuch flavour.

Pure Tasmanian Water

Whisky is a marriage between the art of distillation and pristine water and when it comes to pristine water, Tasmania reigns supreme. Water not only matters in the finished product but at every single production step along the way and we use only the best - pure Tasmanian water.


Tasmania’s untamed wilderness, wide open landscapes, lack of pollution, and the straight line to Antarctica all come together to help produce some of the world’s purest and best tasting water.


Where does the Water come from for your Whisky?

At every stage of our whisky journey, we carefully source water from the perfect places: early on, we capture pristine rainwater from our shed roof, and as a final flourish, spring water finishes off every bottle.

Australian Grains

Australia is home to some of the best barley crops and barley farmers in the world. We are fortunate to have built great relationships with the best farmers, maltsters and suppliers of the best grains Australia has to offer year after year to use in our Tasmanian Whisky.

Distillation

Meet the hardworking beauty, Pandora

Our finished wash is double distilled  in  Pandora, our aptly named, Tasmanian built copper pot - and ain’t she a beauty. 

Pandora is a modest 300 litre copper pot still that allows us to run a second distillation, or “spirit run” with a very gentle flow. This gentle flow provides us with a very refined and smooth spirit that’s ready for barrels. 

Maturation

The ultimate test in patience

This is where the magic happens—the final step in creating whisky with bold, unforgettable character. Our distillers handpick small oak casks, anywhere between 20 and 50 litres, tailored to the unique personality of each spirit run.

No two spirit runs are exactly the same—nature sees to that. We embrace it, letting those subtle differences shine through. The casks we use? They’re as varied as the flavours they bring, from ex-Bourbon barrels to Port, Pinot, Sherry, or even fresh French oak.

How long does it all take? As long as it needs. Each batch matures at its own pace, waiting patiently until it’s ready to bring its full complexity to life.

Bottling 

The only way to know when a whisky is ready? You taste it. Barrel by barrel, we sample what’s inside to decide when it’s reached its peak and at what strength it should be bottled. There’s no shortcut, no algorithm—just experience, instinct, and the pure pleasure of tasting whisky at its finest.

We’ve also chosen not to chill filter our whisky. Instead, we let it settle naturally, allowing any particulates or floc to drop away on their own. It’s a hands-on, old-school method, but it means every drop stays true to the way whisky should be—bold, complex, and full of character. From there, we hand-bottle and label each one right here at the distillery, because every detail matters when it comes to crafting something this special.
