Nonesuch Distillery is where big flavours meet small-batch craftsmanship, nestled a short drive outside of Hobart in beautiful country Tasmania.

We’re not the Big Boys and we never wanted to be.

It sounds like a line, we know, but we love distilling, dreaming up flavours, and the satisfaction of getting it right after the countless experiments along the way. Getting to create whisky and gin in Tasmania is what makes us want to jump out of bed of a morning. 

But our dream has never been to compete with the huge distilleries on price or quantities. We’re proud to be a craft operation that produces amazing flavour profiles that are unique and memorable. 

With small batches of our products we can make sure each one receives top-tier care, attention, and, yes, a little bit of love, at every step of the way.

At Nonesuch Distillery, we’re completely hooked on whisky—crafting it, smelling it, drinking it… dreaming about it. But here’s the deal: we’re not in the business of telling you how to enjoy it, or setting rules on the “right” way to drink it.

Want to sip it straight from the glass? Perfect.

Add a drop of water and watch the flavours bloom? Absolutely.

Fancy a little mixer to jazz things up?  Go

You do you—it’s your whisky, your adventure.

So go ahead, make it your own. Because the best whisky experience is the one that’s right for you.

A Nonesuch History Lesson

We didn’t start out creating small batch Tasmanian whisky, believe it or not Nonesuch Distillery was first established as a Gin Distillery. We quickly established a reputation for high-quality gins that spoke of “place” tasting uniquely Tasmanian with our use of local botanicals alongside the more traditional gin ingredients.  Our highly respected Sloe Gin (widely considered one of the best Tasmanian Sloe Gins) used Sloes from old hedgerows growing across Tasmania. 

In 2017 Nonesuch became a true family affair when Chris joined his Dad Rex, and Annette at the Distillery. Chris bought with him a bottomless pit of passion and a crazy idea - to produce a Nonesuch Whisky.  It was this passion, dedication and endless research that resulted in the range of Nonesuch Single Malt and Nonesuch Single Grain Whiskies we have today.

Nonesuch is a family affair, with Annette along with Father and Son Rex and Chris working together to grow Nonesuch into something extraordinary—a distillery that’s all about family, craft, and sharing what they love.

Meet Rex

OWNER & DISTILLER

Back in 2014, a chance meeting with the godfather of Australian distilling, Bill Lark, turned an idea into something more. That moment? It was the spark that took Rex’s dream of a craft distillery from a wild idea to a real, tangible future.

Rex is a highly respected Gin Distiller and the Man behind our well-loved (and sorely missed) Sloe Gin. 

Working with family in a business that is new and in an industry that is still young is just amazingly enjoyable. Making great spirits on this amazing island alongside Chris and Annette; that’s what makes me want to leap out of bed of a morning” - Rex

The southeast region including Marion Bay Beach and the amazing natural features (Tasmans Arch, Devils Kitchen, Tessellated Pavement) at Eaglehawk Neck.

Your favourite food?

Can’t go past fresh Tassie scallops or freshly caught flathead. 

Your “must-watch” movie recommendation?

Got to be A Beautiful Mind. (2nd pick – Life is Beautiful).

Which celebrity would you most like to get a drink with?

Gave a lot of thought to this one and settled on Neale Daniher, Aussie Rules Footballer and the 2025 Australian of the Year.

The reason? I reckon he would be terrific company and I reckon I would leave a better bloke after spending time with such a genuinely brave man.

Your drink of choice?

Easy, a classic dirty martini made with Nonesuch Dry Gin (one olive, good splash of the olive brine in a perfectly chilled glass).

Say Hello to Annette

OWNER & ACCOUNTS

Back in 2014, Annette was right there with Rex, helping to plan the distillery and handpicking the botanicals that would define our gin and the unique charm of our Sloe Gin.

While Rex focused on distilling and marketing, Annette left her job to take on the countless other tasks that keep a distillery running—bottling, labelling, accounting, invoicing, packing online orders, you name it, she did it!

These days, you’ll mostly find Annette immersed in record-keeping and accounts, but every now and then, she heads back to the production floor for old times sake.

Name a "must see" Tasmanian location? 

My “must see” is the Bay of Fires region on the Tasmanian East Coast. The red granite rocks, crystal clear blue water and the small beaches with the whitest sand possible make this a really beautiful area.

Your favourite food?

Roast lamb with buttered Pink Eye potatoes and roast veggies.

Your “must-watch” movie recommendation?

Beaches is my all-time favourite movie.

Which celebrity would you most like to get a drink with?

Bette Midler would have to be my celebrity pick to have a drink with.

Your drink of choice?

A Nonesuch Dry Gin with a dry tonic and frozen green grapes replacing the ice.

GENERAL MANAGER & WHISKY PRODUCTION MANAGER

Chris joined the Nonesuch crew back in 2017 with one clear goal: to craft incredible small-cask single malts and introduce a Nonesuch grain whisky to the world.

While he’s all about upholding the high bar Tasmanian single malts are famous for, Chris isn’t one to settle. His passion for innovation led to the creation of Nonesuch Grain Whiskies—a game-changer for Tassie’s craft whisky scene. Made with unique blends of corn, rye, and barley, these whiskies bring something entirely different to the table.

You might also know him as Distiller Chris on TikTok, where over 130,000 followers tune in to watch him share the art of distilling Nonesuch whiskies and take on the whisky gatekeepers, one bold post at a time.

I always tell anyone visiting Tasmania to not get stuck in Hobart. Tassie is so much more than the city. The small towns are where you want to be. Can discover so much more of the real Tasmania. 

Your favourite food?

Can't pass up a good pub meal. Standard for me is a nice steak or a classic pub parmi, YES! It is a PARMI not PARMA.

Your “must-watch” movie recommendation?

Has to be old school action or bit of Sci-Fi: Back To the Future, The Rock or a good Christmas movie like Die Hard.

Which celebrity would you most like to get a drink with?

Round the table, Shane Gillis, Bert Kreischer & Joey Diaz - Can you imagine the absolute scenes lol.

Your drink of choice?

Nonesuch Triple Grain, usually neat or occasionally with a block of ice. I'm particularly fond of the ex-bourbon or new American oak finishes.
