We distill this classic Gin in a London Dry style using "Pandora", our 300 liter copper pot still.
Distilling this way, with all the botanicals in the still, produces new compounds and that results in a richer, more complex gin.
We take things slowly too. Running the still "low and slow" extracts terrific flavours and aromas from the botanicals.
